Baked spring rolls

Exciting Vietnamese spring rolls bursting with fresh flavors.
Ingredients:
  • 80g cellophane (mung bean) noodles
  • 5 dried shiitake mushrooms
  • 225g can water chestnuts, drained, rinsed, finely chopped
  • 500.00 ml finely shredded wombok (Chinese cabbage)
  • 2 carrots, peeled, coarsely grated
  • 65g (1 cup) fresh bean sprouts, ends trimmed
  • 4 shallots, ends trimmed, thinly sliced
  • 82.50 ml chopped fresh coriander
  • 20.00 ml finely grated fresh ginger
  • 48.80 gm fish sauce
  • 20.00 gm caster sugar
  • Pinch of white pepper
  • 20 (21.5 x 21.5cm) frozen spring roll wrappers, thawed
  • Olive oil spray
  • Baby cos lettuce leaves, to serve
  • Fresh mint leaves, to serve
  • Vietnamese dipping sauce, to serve
Instructions:
  • Place noodles and mushrooms in separate bowls. Cover with boiling water and let soak for 10 minutes. Drain the noodles and mushrooms, discard the mushroom stems, and finely chop the mushrooms. Cut the noodles into short lengths using kitchen scissors. Combine noodles, mushrooms, water chestnut, wombok, carrot, bean sprouts, shallot, coriander, ginger, fish sauce, sugar, and white pepper in a bowl.
  • 1. Preheat the oven to 200°C and line a baking tray with non-stick baking paper. 2. Lay one spring roll wrapper in a diamond shape on a work surface. 3. Spoon 2 tablespoonfuls of mushroom mixture across the lower corner of the wrapper. 4. Brush the top corner of the wrapper with water. 5. Fold in the sides of the wrapper and roll it up to enclose the filling. 6. Place the rolled spring roll on the prepared tray. 7. Repeat the process with the remaining spring roll wrappers and mushroom mixture.
  • Lightly coat the spring rolls with oil spray. Bake for 10 minutes, then flip them over and coat with more oil spray. Continue baking for an additional 15 minutes until they are a beautiful, light golden brown.
  • Cut the spring rolls in half crossways and serve with fresh lettuce, fragrant mint, and a flavorful sauce.
