Ingredients:
  • 2 trout fillets
  • 2 tablespoons butter
  • 2 tablespoons chopped green onion
  • 1 tablespoon chopped fresh parsley
  • 0.5 cup sliced mushrooms
  • 0.33333334326744 cup white wine
  • 1.5 teaspoons lemon juice
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon salt
  • 4 artichoke hearts in water, drained and halved
  • 0.5 cup chopped cherry tomatoes
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and elegantly place the fillets in a generously sized baking dish.
  • In a large skillet over medium heat, melt butter. Sauté green onion, parsley, and garlic until fragrant, about 1 to 2 minutes. Add mushrooms and cook until softened, about 1 to 2 minutes. Stir in white wine, lemon juice, cayenne pepper, and salt. Remove from heat and gently fold in artichoke hearts before pouring over the fish.
  • Bake the fish in the preheated oven for about 20 minutes until it flakes easily with a fork, then top with scattered tomatoes.
  • Position the oven rack 6 inches below the broiler element and preheat the broiler.
  • Continue to broil the fish until it achieves a beautifully golden brown color, for an additional 1 to 2 minutes.
