Baked zucchini fries coated in breadcrumbs, Parmesan, and Italian seasoning. Perfectly crispy appetizer or side dish, served with marinara for dipping.
Ingredients:
  • For serving
  • Lemon wedges
  • For the zucchini and batter
  • Cooking spray
  • 2 medium to large zucchinis, about 1 1/2 pounds
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup plus 1 to 2 tablespoons whole milk
  • For the breadcrumb mixture
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 lemon, zested, optional
  • 1/2 cup marinara sauce, optional
Instructions:
  • Preheat your oven to 425°F and prepare a large baking sheet by lining it with parchment paper and spraying it with cooking spray.
  • Prepare the zucchini by cutting each one into thirds, then slicing each piece in half lengthwise. Next, cut each of those halves into 3 or 4 triangular strips, approximately 2 to 3 inches long and 1/2 to 3/4 inch thick.
  • For the batter, whisk flour, salt, and 3/4 cup whole milk in a shallow bowl until slightly thinner than pancake batter. Adjust with up to 2 tablespoons milk as needed. In another dish, combine panko breadcrumbs, Parmesan, Italian seasoning, garlic and onion powder, salt, pepper, red pepper flakes, and lemon zest (optional).
  • Coat zucchini strips in batter and breadcrumbs: with a wet hand and a dry hand, dip zucchini strips into the batter followed by the breadcrumb mixture, gently pressing breadcrumbs onto them. Arrange on a baking sheet with space in between in rows. Lightly spray with cooking spray.
  • Bake the zucchini fries: Bake for 14 to 15 minutes until the bottom is crisp. Gently flip each fry using tongs. Cook for an additional 12 to 15 minutes until light golden brown and crispy on both sides. Serve immediately with lemon and warm marinara. For later, store in the fridge for 3 to 4 days and reheat in the oven at 425°F for 10 minutes or in an air fryer until crispy. Enjoy!
