Delicious gluten-free zucchini Parmesan fries - perfect for entertaining!
Ingredients:
  • 0.5 cup coconut flour
  • 2 egg whites
  • 0.25 cup water
  • 1 cup almond meal
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon ground black pepper
  • 4 zucchini, quartered lengthwise
  • 1 teaspoon chopped fresh parsley
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Place coconut flour into a bowl.
  • Combine egg whites and water in a bowl and whisk until frothy.
  • In a separate bowl, mix together almond meal, Parmesan cheese, Italian seasoning, and pepper.
  • Coat zucchini slices in coconut flour using tongs, then dip in beaten egg whites and coat with almond meal mixture. Place on a lined baking sheet.
  • Bake in the preheated oven for 20 minutes until lightly golden. Sprinkle with fresh parsley before serving.
