Try this tantalizing tangy chicken breast paired with fresh salad greens or pasta for a delectable meal.
Ingredients:
  • 2/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 cloves garlic, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons sugar
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 2 cups grape tomatoes (12 oz), cut into quarters
  • 4 oz mozzarella cheese, cut into bite-size strips (1 cup)
  • 1 shallot, finely chopped (3 tablespoons)
  • 8 cups salad greens
Instructions:
  • In a medium bowl, vigorously whisk together oil, vinegar, minced garlic, mustard, sugar, salt, and pepper until fully incorporated. Save 1/2 cup of the dressing for the salad; set it aside.
  • Place the chicken in a resealable plastic bag and pour the remaining dressing over it. Seal the bag and make sure the chicken is coated with the marinade by turning it. Refrigerate for 30 minutes.
  • Preheat a gas or charcoal grill. In a medium bowl, combine tomatoes, cheese, shallot, and 2 tablespoons of the reserved dressing; set aside.
  • After removing the chicken from the marinade and discarding it, delicately brush the grill rack with oil. Grill the chicken over medium heat, turning once, for 12 to 15 minutes until the juices run clear and the thickest part reaches 165°F. Rest the chicken for 5 minutes before slicing it into 1/2-inch strips.
  • Separate salad greens onto 4 plates. Add tomato mixture and chicken on top. Drizzle with the remaining dressing.
