Balsamic Chicken Skillet with Mixed Berry Sauce

Tangy balsamic berry marinade doubles as a flavorful sauce for one-skillet chicken or pork entree.
Ingredients:
  • 1.5 cups mixed berries
  • 0.25 cup balsamic vinegar
  • 2 tablespoons whiskey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon minced ginger
  • 1 tablespoon minced shallot
  • 0.25 teaspoon cayenne pepper
  • 4 skinless, boneless chicken breast halves
  • 1 tablespoon oil
Instructions:
  • Blend together a delicious mixture of berries, vinegar, whiskey, mustard, lemon juice, honey, brown sugar, ginger, shallot, and cayenne pepper until smooth in a blender.
  • Place the chicken in a resealable plastic bag and pour in half of the berry marinade. Remove any excess air from the bag, seal it, and marinate in the fridge for 4 hours to overnight. Set aside the remaining berry sauce for later use.
  • 1. Take the chicken out of the refrigerator and bring it to room temperature. 2. Heat oil in a large skillet over medium-high heat. 3. Sear the chicken in the hot skillet until golden brown on both sides, occasionally brushing with leftover marinade. 4. Cook until the chicken is cooked through, about 15 minutes; discard any remaining marinade. 5. Remove from heat and allow it to rest for 3 minutes before serving.
  • Simmer the berry sauce in a small saucepan over medium-low heat.
  • Slice the chicken into 1/2-inch thick pieces, then generously drizzle the warmed berry sauce over it.
