Easy grilled baby potatoes with buttery balsamic flavor in a convenient foil packet, perfect for a simple and delicious side dish.
Ingredients:
  • heavy-duty aluminum foil
  • 2 pounds baby (1- to 2-inch long) potatoes, halved lengthwise
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons onion powder
  • 2 tablespoons butter, cut into small chunks
Instructions:
  • Preheat your outdoor grill to medium heat and lightly oil the grate. Lay out a 24-inch long piece of heavy-duty aluminum foil on a flat surface.
  • Arrange potatoes in the center of the foil. Drizzle with vinegar and olive oil, then sprinkle with onion powder, salt, and pepper. Evenly scatter butter chunks over the top.
  • Bring the two shorter edges of foil up and around the potatoes, fold together at the top to create a seam, and then fold the remaining two edges to seal the packet securely.
  • Position the packet of potatoes, seam side up, on the preheated grill. Grill until tender, approximately 25 minutes, making sure to turn and shake the packet occasionally to evenly cook the potatoes.
  • After grilling, let the packet rest sealed until serving time. Exercise caution while opening, as the potatoes will be piping hot, and steam will escape rapidly.
