Enhance grilled meat with a flavorful balsamic vinegar, rosemary, and thyme marinade for a delicious pork dish.
Ingredients:
  • 2 pork tenderloins (1 1/2 pounds)
  • 8 large rosemary sprigs
  • 8 large thyme sprigs
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive or vegetable oil
Instructions:
  • Cut the pork tenderloin into 6 pieces. Flatten each piece into a round shape that is 1 to 1 1/4 inches thick.
  • In a glass or plastic dish or resealable bag, combine rosemary, thyme, vinegar, and oil. Add pork and coat well. Cover and refrigerate, turning pork occasionally, for 1 to 24 hours.
  • Prepare the grill by lightly coating the rack with vegetable oil and heating the coals or gas grill for direct heat.
  • Take out the pork and herbs from the marinade, keeping the marinade aside. Grill the pork, covered, 4 to 5 inches from medium heat for 7 minutes, turning and basting frequently with the marinade. Dispose of any extra marinade. Continue grilling the pork, covered, for another 6 to 8 minutes, turning occasionally, until slightly pink in the middle.
