Grilled Balsamic Pork with Herbs

Enhance grilled meat with a flavorful balsamic vinegar marinade infused with rosemary and thyme sprigs.
Ingredients:
  • 2 pork tenderloins (1 1/2 pounds)
  • 8 large rosemary sprigs
  • 8 large thyme sprigs
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive or vegetable oil
Instructions:
  • Cut each pork tenderloin into 6 rounds, pressing each piece into a round shape that is 1 to 1 1/4 inches thick with the cut side down.
  • Combine rosemary and thyme sprigs with vinegar and oil in a glass or plastic dish or resealable plastic bag. Add pork and coat well. Refrigerate, turning pork occasionally, for at least 1 hour, or up to 24 hours.
  • Prepare the grill by brushing the rack with vegetable oil and heating it for direct heat on either coals or a gas grill.
  • Take out the pork and herbs from the marinade, keeping the marinade aside. Grill the pork covered, at a distance of 4 to 5 inches from medium heat for 7 minutes, flipping and basting often with the reserved marinade. Dispose of any extra marinade. Continue grilling the pork covered for 6 to 8 more minutes, turning occasionally, until it is slightly pink in the middle.
