Elevate your potatoes with balsamic vinegar and thyme for a gourmet side dish.
Ingredients:
  • 100g unsalted butter
  • 1.3kg waxy potatoes (such as kipfler), cut into 2cm pieces
  • 2 red onions, finely chopped
  • 40.00 ml chopped fresh thyme leaves
  • 175ml balsamic vinegar
Instructions:
  • 1. Preheat your oven to 170°C. 2. In a large baking dish or ovenproof frypan over medium heat, melt butter with oil. Add potato and onion, cook for 10-15 minutes until they start to soften and turn golden, stirring occasionally. 3. Season with salt, pepper, thyme, and half the vinegar. 4. Cover with foil and bake for 20 minutes. 5. Remove foil, add remaining balsamic, and bake for another 20-30 minutes until golden and cooked through.
