Balsamic-roasted carrots drizzled with olive oil, salt, pepper, and vinegar make a tasty, easy side dish.
Ingredients:
  • 1 (8 ounce) package baby carrots
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and prepare a 9x13-inch baking dish by lining it with aluminum foil.
  • Place the carrots, olive oil, salt, and pepper in a resealable plastic bag or the carrot bag. Seal and shake well to ensure even coating. Transfer the carrots to the baking dish.
  • Roast in the preheated oven for 30 minutes until tender. Drizzle carrots with balsamic vinegar and gently toss to coat. Place back in the oven and bake until liquid is absorbed, 5 to 10 minutes. Serve piping hot.
