Delightful strawberry skewers perfect for a BBQ dessert.
Ingredients:
  • 168.30 gm mascarpone, at room temperature
  • 24.00 gm icing sugar mixture
  • 2 tsp finely grated orange rind
  • 90.00 gm firmly packed brown sugar
  • 82.50 ml balsamic vinegar
  • 32 strawberries, hulled, washed
Instructions:
  • Mix mascarpone, powdered sugar, and orange zest in a bowl.
  • In a saucepan, combine brown sugar, vinegar, and 2 tablespoons of water. Gently simmer over low heat. Allow to simmer uncovered for 2 minutes. Remove from heat and let it cool.
  • Skewer fresh strawberries and generously brush with tangy vinegar mix.
  • Heat up the barbecue plate or chargrill over medium heat. Lightly coat the skewers with oil. Grill for 1 to 2 minutes until the strawberries are slightly charred. Finish by drizzling the skewers with the rest of the vinegar mixture and serve with the mascarpone mixture.
