Intensely flavorful balsamic-marinated mushroom salad, ideal for any meal.
Ingredients:
  • 0.25 cup good quality balsamic vinegar
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • salt and ground black pepper to taste
  • 1 pound sliced fresh mushrooms
  • 1 medium sweet onion, minced
  • 2 tablespoons minced fresh parsley
Instructions:
  • Combine the balsamic vinegar, olive oil, minced garlic, salt, and pepper in a small bowl and mix well.
  • Combine mushrooms and onion in a large bowl. Drizzle with balsamic mixture; toss gently until evenly coated. Cover and refrigerate for 6 to 8 hours, stirring occasionally.
  • Garnish with freshly chopped parsley right before serving.
