Roasted mushrooms with a sweet balsamic glaze, ready in 35 minutes.
Ingredients:
  • 1 pound white button mushrooms
  • 4 stalks green onions
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons minced fresh thyme leaves
  • 0.5 teaspoon salt, or more to taste
  • 0.25 teaspoon black pepper
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C). Cover a baking sheet with foil and coat it with cooking spray for easy cleanup.
  • Clean mushrooms with a damp paper towel, remove stems, and discard. Halve larger mushrooms to ensure uniform size, then place in a medium bowl.
  • Cut the white parts of the green onions into 1/2-inch pieces and mix with the mushrooms. Slice the green parts thinly and reserve for later use.
  • Combine oil, vinegar, thyme, 1/2 teaspoon salt, and pepper in a small bowl and whisk until well blended. Pour over the mushroom mixture and mix well to ensure everything is coated. Spread out in a single layer on the baking sheet.
  • Roast mushrooms in preheated oven for 10 minutes, flip, then roast for another 10 minutes. Remove from oven, season with extra salt if desired, and sprinkle with reserved green onion parts.
