Delightful cinnamon banana muffins for a satisfying after-school treat for kids.
Ingredients:
  • 300g self-raising flour
  • 4.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • Pinch salt
  • 90.00 gm brown sugar
  • 75g butter, melted
  • 125ml milk
  • 57.20 gm honey
  • 4.40 gm vanilla essence
  • 2 eggs
  • 260.00 gm (about 2 bananas) mashed banana
Instructions:
  • Preheat the oven to 180°C. Prepare 12 muffin pans by greasing with melted butter or lining with paper cases.
  • Combine the flour, baking powder, bicarbonate of soda, cinnamon, and salt by sifting them into a large bowl. Mix in the sugar.
  • In a large jug, mix together melted butter, milk, honey, vanilla, eggs, and mashed banana until smooth.
  • Create a hollow in the center of the dry ingredients. Pour in the egg mixture and gently mix until just combined. Distribute the mixture into muffin pans. Bake for 20 minutes or until a skewer comes out clean. Let the muffins cool in the pans for 5 minutes, then transfer them to a wire rack to cool completely.
