Banana and apple cake

Ingredients:
  • 125g softened butter
  • 1 medium banana, mashed
  • 1 medium fuji apple, grated
  • 2.50 gm bicarbonate of soda
  • 225.00 gm self-raising flour
  • 64.38 gm milk
  • Raw sugar, to sprinkle
Instructions:
  • Preheat your oven to 180C and generously grease a loaf tin.
  • Whip butter and caster sugar until fluffy and pale.
  • Carefully incorporate each egg into the mixture until fully combined. Gently fold in mashed banana and apple.
  • Combine half of the dry ingredients into the mixture until mixed, then incorporate the remaining dry ingredients and milk until a smooth batter forms.
  • Transfer the mixture into a greased loaf pan and generously sprinkle raw sugar on top for a sweet and crispy finish.
  • Bake for 45 minutes or until a skewer inserted comes out clean. Let it sit in the pan for 5 minutes, then transfer to a wire rack to cool.
