Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups Granny Smith apples, thinly sliced
  • 0.75 cup chopped pecans
  • 0.75 cup chopped black walnuts
  • 1 cup brown sugar
  • 0.5 cup milk
  • 0.5 cup butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon mayonnaise
  • 2 cups confectioners' sugar
Instructions:
  • To start, preheat your oven to a toasty 350 degrees F (175 degrees C). Next, combine flour, salt, baking soda, and cinnamon by sifting them together; then, leave this mixture aside. Finally, make sure to generously grease and flour your 8-inch Bundt pan.
  • In a bowl, combine eggs, oil, and 2 teaspoons vanilla extract, whisk until smooth. Add sifted dry ingredients and mix until moistened. Fold in sliced apples, pecans, and walnuts. Transfer the batter into a prepared Bundt pan.
  • Bake the cake until the top is golden brown and a toothpick inserted in the center comes out clean, approximately 1 1/2 hours. Mix brown sugar, milk, butter, and 1 teaspoon vanilla extract in a saucepan. Simmer for 2 minutes, then drizzle over the cake in the Bundt pan right after it's out of the oven. Let the cake cool in the pan on a wire rack until it reaches room temperature, about 4 hours.
  • Combine mayonnaise, 1 teaspoon vanilla extract, and confectioners' sugar until smooth. Then gently remove cake from mold and transfer to a serving plate. Finally, generously spread the icing over the top of the cake.
