Hearty vegetables cooked in butter, mixed with potatoes, beef, and broth for a comforting stew.
Ingredients:
  • 0.75 cup butter
  • 1 large green bell pepper, sliced
  • 0.5 large onion, sliced
  • 1 pound baby carrots
  • 1 pound fresh mushrooms, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 pound cubed beef
  • 3 pounds white potatoes, thickly sliced
  • 1.5 quarts water
  • 5 cubes beef bouillon, crumbled
Instructions:
  • In a large skillet over medium heat, sauté bell pepper, onion, carrots, and mushrooms in butter until onion is translucent. Add garlic powder, Italian seasoning, salt, pepper, and beef. Cover and cook on low heat until vegetables are tender and meat is browned, stirring often.
  • While waiting, simmer potatoes in a 2-quart saucepan submerged in water until soft for about 15 minutes. Drain and fold potatoes into the vegetable mixture.
  • In a 2-quart saucepan, pour 1 1/2 quarts of water and dissolve bouillon in it. Bring to a boil, then remove from heat.
  • In a large mixing bowl or stock pot, gently mix broth and vegetables until thoroughly combined. Serve while hot.
