Indulgent Mountain Dew cake with zesty pineapple topping.
Ingredients:
  • flour
  • 1 (18.25 ounce) package lemon cake mix
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 10 fluid ounces Mountain Dew™
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 cup white sugar
  • 3 tablespoons cornstarch
  • 1 cup flaked coconut
  • 0.25 cup butter
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by greasing and flouring it.
  • In a large bowl, thoroughly combine cake mix, oil, beaten eggs, and Mountain Dew. Transfer the mixture to the prepared baking dish.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely on a wire rack.
  • In a saucepan, mix pineapple with its juice, sugar, and cornstarch. Bring to a boil and stir constantly until thickened. Remove from heat and mix in coconut and butter. Spread the mixture evenly over the cooled cake.
