Preheat oven, bake delicious banana chocolate cupcakes.
Ingredients:
  • 150g butter, at room temperature
  • 155g (3/4 cup, firmly packed) brown sugar
  • 4.40 gm vanilla extract
  • 2 ripe bananas, peeled, mashed
  • 2.00 x 200g pkt good-quality dark chocolate, coarsely chopped
  • 300g (2 cups) self-raising flour
  • 60ml (1/4 cup) milk
  • White chocolate curls, to decorate
  • 125ml (1/2 cup) thickened cream
Instructions:
  • Preheat your oven to 180°C and prepare sixteen 80ml (1/3-cup) muffin pans by filling them with paper cases.
  • In a medium bowl, use an electric beater to mix the butter, sugar, and vanilla until pale and creamy. Add eggs one at a time, beating well after each addition. Mix in banana and chocolate until well combined. Gently fold in flour and milk using a large metal spoon. Divide mixture among muffin pans and bake for 25 minutes, or until a skewer comes out clean. Allow to cool completely.
  • For the chocolate frosting, melt the chocolate and cream together in a heatproof bowl over simmering water. Stir occasionally until smooth. Let it cool for 30 minutes, then refrigerate for 2 hours until almost firm. Beat with an electric mixer until pale and fluffy.
  • Evenly spread the cupcakes with frosting using a round-bladed knife and top with chocolate curls before serving.
