Banana Bread Mug Cake in a Minute

Whip up Chef John's quick and indulgent banana bread mug cake using that ripe banana on your counter. Ready in just one minute!
Ingredients:
  • 1 medium very ripe banana
  • 2 tablespoons packed brown sugar
  • 1 tablespoon white sugar
  • 0.25 teaspoon salt
  • 0.25 teaspoon baking powder
  • 0.125 teaspoon baking soda
  • 3 tablespoons melted unsalted butter
  • 1 tablespoon milk
  • 0.125 teaspoon vanilla extract
  • 0.5 cup all-purpose flour
  • 0.25 cup chopped walnuts
  • 2 tablespoons dark chocolate chips
  • 6 slices banana
  • 1 tablespoon white sugar, or to taste
Instructions:
  • In a mixing bowl, blend ripe banana, brown sugar, white sugar, salt, baking powder, baking soda, melted butter, milk, and vanilla using a potato masher until smooth. Gently fold in flour until just combined, then add walnuts and chocolate chips, stirring until evenly distributed.
  • Divide the batter evenly between two lightly buttered coffee mugs or cups. Gently tap the mugs on a towel to remove any air pockets and settle the batter.
  • Microwave each cup individually until a toothpick inserted comes out clean, approximately 1 minute each.
  • Allow to cool slightly before serving.
  • For added flair, decorate each serving with sliced bananas, sprinkle sugar on top, and caramelize with a blowtorch.
