Perfectly balanced banana bread with irresistible caramel icing.
Ingredients:
  • 300.00 gm self-raising flour
  • 1.25 gm bicarbonate of soda
  • 180.00 gm firmly packed brown sugar
  • 195.00 gm buttermilk
  • 2 eggs
  • 4.40 gm vanilla extract
  • 260.00 gm mashed banana (see note)
  • 90.00 gm firmly packed brown sugar
  • 50g butter, chopped
  • 41.20 gm milk
  • 75.00 gm icing sugar mixture
Instructions:
  • Preheat your oven to 170°C (150°C fan-forced) and lightly grease a 6cm-deep, 10cm x 20cm loaf pan. Line the pan with baking paper, leaving a 2cm overhang on the long ends.
  • Sift flour and bicarbonate of soda into a bowl, then add sugar and stir to combine. In a separate jug, mix milk, eggs, and vanilla, then gently fold in the mashed bananas. Combine the milk mixture with the flour mixture, then pour the batter into the prepared pan.
  • Bake the cake for 1 to 1 ¼ hours until a skewer inserted in the center comes out clean. Allow it to rest in the pan for 10 minutes, then transfer to a wire rack to cool.
  • Prepare the icing by combining brown sugar, butter, and milk in a saucepan over low heat. Stir and cook for 2 minutes, ensuring not to boil, until the sugar dissolves. Increase heat to medium and allow it to come to a boil. Lower the heat and continue cooking for 2 to 3 minutes until slightly thickened. Remove from heat, then mix in icing sugar until smooth. Let it cool for 10 minutes before using.
  • Spread the loaf generously with the delectable icing and present it for your enjoyment.
