Banana caramel muffins with a twist of banoffee flavor.
Ingredients:
  • 187.50 ml plain flour
  • 53.75 gm caster sugar
  • 60g butter, melted, cooled
  • 257.50 gm milk
  • 1 egg, lightly beaten
  • 260.00 gm mashed banana
  • 82.50 ml caramel bits
Instructions:
  • Preheat oven to 190°C/170°C fan-forced and set a 12-hole muffin pan with 1/3 cup paper cases.
  • In a big bowl, mingle the flours and sugar, then create a well in the middle. Add butter, milk, egg, and vanilla, mixing until just combined. Gently fold in the banana and caramel bits.
  • Divide the mixture into paper cases. Bake until golden and slightly firm to the touch, about 20-22 minutes. Allow to cool in the pan for 5 minutes, then transfer to a wire rack. Serve and enjoy.
