Irresistible banana chocolate chip muffins: ideal for breakfast or a snack on-the-go.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 3 medium ripe bananas, mashed
  • 0.33333334326744 cup oil
  • 1 teaspoon vanilla extract
  • 0.5 cup chocolate chips
  • 0.5 cup yogurt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 12-cup muffin tin with paper liners.
  • In a medium bowl, mix together the flour, baking powder, baking soda, and salt.
  • Using an electric mixer, beat eggs until foamy. Mix in sugar until fluffy. Incorporate mashed bananas, oil, and vanilla extract while continuing to beat. Add flour mixture in 2 parts, alternating with yogurt, and beat briefly after each addition until creamy after the last flour addition. Gently fold in chocolate chips. Fill muffin cups with batter up to the top.
  • Bake in the preheated oven for 22 to 25 minutes until the tops spring back when lightly pressed. Let it cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
