Quick and easy banana cake for two, perfect for using ripe bananas. Fluffy and moist, it rises and sinks in the microwave.
Ingredients:
  • 1 very ripe banana, well mashed
  • 1 egg
  • 27.00 gm maple syrup
  • 18.20 gm olive oil
  • 30.00 ml Greek yoghurt
  • 2.20 gm vanilla extract
  • 55g (1/3 cup) wholemeal self-raising flour
  • 20.00 ml dark choc chips
  • Ground cinnamon, to dust, optional
Instructions:
  • Prepare two 250ml (1 cup) microwave-safe mugs by greasing them lightly.
  • Combine the banana, egg, maple syrup, oil, yogurt, and vanilla in a bowl, whisk until blended. Add flour and mix gently with a spatula until just combined. Fold in choc chips.
  • Evenly distribute the banana mixture into the mugs. Microwave each mug on HIGH for 1 minute and 30 seconds until springy when touched in the center. (Refer to notes for guidance.)
  • If desired, dust delicately with cinnamon. Let it cool for 2 minutes before serving.
