Microwave mug cake

Make a quick and comforting mug cake in the microwave for a cozy treat in minutes. Customize with various flavor options for a personal touch.
Ingredients:
  • 1 small ripe banana
  • 75 g self-raising flour
  • 50 g soft brown sugar
  • olive oil
  • 1 large free-range egg
  • a handful of a handful of leftover Christmas chocolates, your favourite chocolate bar, or chocolate chips
Instructions:
  • Begin by peeling the banana and placing it in a food processor to blitz, or mash it by hand in a large bowl. Combine the flour, a pinch of sea salt, sugar, 4 tablespoons of olive oil, and crack in the egg. Pulse in the food processor or whisk by hand until smooth. Divide the batter into 4 microwave-proof cups (roughly 200ml each). Break the chocolate bar into chunks and gently push them into the batter. Microwave in pairs on high (800W) for 1 minute and 30 seconds until the cakes are risen and gooey in the center. Carefully remove the cups from the microwave and allow them to cool slightly. Enjoy with a dollop of yogurt, custard, or a small scoop of ice cream.
