Banana Almond Breeze Pancake Bites: Perfect for breakfast!
Ingredients:
  • 3-5 bananas
  • 1 tablespoon vanilla extract
  • 2 tablespoon honey
  • 5-7 tablespoon Almond Breeze Original Almondmilk
  • 1 1/2 cups Blue Diamond Almond Flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Optional: maple syrup
Instructions:
  • Slice the bananas into ½ inch thick rounds.
  • Combine Blue Diamond Almond Flour, salt, baking soda, and cinnamon in a medium bowl and whisk until well mixed.
  • In a large bowl, combine eggs, vanilla, honey, and 5 tablespoons of Almond Breeze Original Almondmilk, and whisk until smooth.
  • Combine dry ingredients with wet ingredients until fully incorporated. Gradually incorporate up to 2 more tablespoons of Almond Breeze Original Almondmilk if needed until desired thick yet spreadable consistency is achieved.
  • Prepare a non-stick skillet or griddle by greasing it lightly, then heat it over medium-low heat.
  • Using a fork, coat each banana slice in the batter, ensuring it is fully covered. Let any extra batter drip off before transferring the banana to the skillet.
  • Add the banana pancake slices to the skillet and flip after a couple of minutes, once bubbles form on the bottom and pop. Continue this process until all the desired banana pancake bites are cooked or the batter is finished.
  • Drizzle maple syrup over banana pancake bites or serve with syrup for dipping.
