Crunchy chocolate chip banana bread biscotti - a delicious treat for breakfast or anytime!
Ingredients:
  • 1 cup sugar
  • 1/2 cup butter or margarine, softened
  • 1/2 cup mashed very ripe banana (1 medium)
  • 1 teaspoon vanilla
  • 2 eggs
  • 3 cups Gold Medal™ flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup miniature semisweet chocolate chips
Instructions:
  • Preheat your oven to 350°F and prepare a large cookie sheet by greasing it with shortening or cooking spray, or lining it with cooking parchment paper or a silicone baking mat.
  • In a large bowl, cream together sugar and butter using an electric mixer or mix by hand. Blend in banana, vanilla, and eggs until mixture is smooth. Gently fold in flour, baking powder, salt, and chocolate chips until well combined.
  • Divide the dough in half and shape each half into a 10x3-inch rectangle on a greased cookie sheet using your hands. The dough might be sticky, but that's perfectly normal.
  • Bake for approximately 25 minutes or until a toothpick inserted in the center comes out clean. Let it cool on the cookie sheet for 15 minutes, then transfer to a cutting board. Use a sharp knife to slice crosswise into 1/2-inch pieces.
  • Arrange slices on baking sheets with the cut sides facing down. Bake for 10 to 12 minutes until they are golden brown and dry on top. Flip the cookies over and bake for another 10 minutes until they are golden brown. Transfer the cookies from the baking sheets to a cooling rack.
