Dutch pastry filled with almond paste, made from scratch for a crispy, flaky Christmas delight.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup water
  • 1.5 cups almond paste
  • 0.75 cup white sugar
  • 0.25 teaspoon almond extract
  • 1 egg white, beaten
Instructions:
  • In a large bowl, combine flour and cold butter using a pastry cutter or two knives until a crumb-like texture forms. Create a well in the center and add cold water. Mix until dough forms, being careful not to overmix. Chill the dough before using.
  • Preheat the oven to 450°F (225°C) and grease the cookie sheets.
  • Combine almond paste, eggs, 3/4 cup sugar, almond extract, and salt in a medium bowl and blend until smooth.
  • Divide dough into 4 equal pieces, then roll each piece out into 15-inch strips. Spread the filling along the center of each strip, roll them up, and pinch the ends to seal. Place the strips 2 inches apart on a cookie sheet, brush with egg white, and sprinkle with sugar.
  • Bake until golden brown, 15-20 minutes in the preheated oven.
