Barbecue dampers with spring herb butter recipe

Elevate your BBQ game with these irresistible bread twists on skewers.
Ingredients:
  • 300.00 gm self-raising flour
  • 130g butter, chopped
  • 1 large spring onion, finely chopped
  • 195.00 gm buttermilk
  • 2 garlic cloves, crushed
  • 40.00 ml chopped fresh mixed herbs (see note)
Instructions:
  • In a large bowl, gently sift flour and season with salt and pepper. Use your fingertips to rub 30g of butter into the flour until it resembles breadcrumbs. Stir in the onion. Create a well in the center of the mixture and pour in the buttermilk. Use a flat-bladed knife to stir until a soft dough forms, adding more buttermilk if needed. Turn the dough out onto a lightly floured surface and knead gently until just smooth. Avoid over-kneading.
  • 1. Divide the dough into 6 equal portions, and shape one portion into a 25cm-long log. Wrap the dough around each skewer, pressing gently to secure. Repeat with the remaining dough and skewers.
  • Preheat a barbecue grill with the hood closed at medium heat. Grill each side for 4 minutes or until beautifully golden and fully cooked.
  • In a small frying pan melted butter over medium-high heat until foaming. Stir in garlic and herbs and cook for 1 minute until fragrant.
  • Drizzle the herb butter mixture over the warm dampers before serving.
