Savory barbecued beef pasta dish using Progresso® broth and sweet corn, ready in just 30 minutes.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 medium red bell pepper, chopped (1 cup)
  • 1 1/2 cups uncooked mini bow-tie (mini farfalle) pasta (5 oz)
  • 2 1/2 cups Progresso™ beef-flavored broth (from 32-oz carton)
  • 1/2 cup barbecue sauce
  • 1/2 teaspoon salt
  • 1 cup frozen corn (from 12-oz bag), thawed
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
Instructions:
  • Cook the beef in a 12-inch nonstick skillet over medium-high heat for 5 to 7 minutes, stirring occasionally, until fully cooked; then drain excess fat.
  • Add the colorful bell pepper and sauté for 1 minute. Mix in the pasta, broth, flavorful barbecue sauce, salt, and pepper. Bring to a boil, then simmer on medium-low heat. Cover and cook for 15 minutes, stirring occasionally, until the pasta is perfectly tender.
  • Gently fold in the corn and 1 cup of cheese. Sprinkle the remaining 1/2 cup of cheese on top. Cover and cook for an additional 3 to 4 minutes until the corn is heated through and the cheese is fully melted.
