Vibrant watermelon and watercress salad with barbecued beef steaks - a perfect sweet and savory pairing.
Ingredients:
  • 4 Beef Eye Fillet Steaks
  • 18.20 gm olive oil
  • 1 garlic clove, crushed
  • 1/4 seedless watermelon (about 500g), rind removed, thinly sliced
  • 100g watercress, sprigs picked
  • 250.00 ml mint leaves
  • 1 small red onion, thinly sliced
  • 200g marinated fetta, cut into cubes, marinade reserved
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high heat. Rub beef with oil, garlic, and season generously. Grill for 3 minutes on each side or until desired doneness. Place on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Grill watermelon slices for 1-2 minutes per side until they develop a light char.
  • Assemble watermelon, watercress, mint, onion, and feta on plates. Thinly slice beef and place on top. Drizzle with 2 tablespoons of feta marinade. Season to taste. Serve promptly.
