Family-friendly summer BBQ dish.
Ingredients:
  • 6.00 gm brown sugar
  • 1 1/2 tsp cayenne pepper
  • 3.75 gm paprika
  • 250.00 ml chopped fresh coriander
  • 75.08 gm olive oil, divided
  • 40.00 gm butter, at room temperature
  • 2 limes, zest only, plus wedges for garnish
  • 6 chicken drumsticks
  • 6 chicken wings, cut in half through the joint
  • 3 corn cobs, husks and silks removed
  • 1 brown onion, thinly sliced into rings
Instructions:
  • Get the barbecue ready for medium heat. Combine brown sugar, cayenne, paprika, and 1 1/2 teaspoons of salt in a small bowl. In a large bowl, mix coriander, 2 tablespoons of oil, butter, and lime zest.
  • Spread the chicken pieces on a baking tray and drizzle with 1 tablespoon of oil. Mix well to coat the chicken evenly. Sprinkle a generous amount of the spice mixture over the chicken. Grill the chicken, flipping occasionally, until caramelized and cooked through - around 20 to 25 minutes for drumsticks and 10 to 15 minutes for wings. Let it rest for a moment before serving.
  • Prepare the corn and onion slices on a separate tray by coating them with the remaining oil and sprinkling the remaining spice mixture. Grill the vegetables directly until tender and charred, approximately 12-15 minutes for the corn and 6 minutes for the onions. Cut the corn cobs into 4 pieces before serving.
  • Combine the chicken, corn, and onion with the flavorful coriander mixture in a large bowl. Season with salt and pepper, then transfer to a platter and serve with lime wedges.
