Whip up a mouthwatering BBQ pork dish in no time using simple pantry items and fresh ingredients.
Ingredients:
  • 4 pork loin steaks
  • 4 cloves garlic, crushed
  • 40.00 ml finely chopped thyme
  • 40.00 ml finely chopped flat-leaf parsley
  • 1 lemon, juiced
  • 60ml (1/4 cup) olive oil, plus extra, to brush
  • 1 loaf ciabatta or Turkish bread, halved horizontally
  • 250.00 ml rocket
  • 1 small red onion, cut into rings
  • 1 red onion, finely chopped
  • 1 clove garlic, crushed
  • 4 vine-ripened tomatoes, roughly chopped
  • 1 lemon, zested
  • 60ml (1/4 cup) red wine vinegar
  • 55g (1/4 cup) caster sugar
  • 62.50 ml finely chopped basil
Instructions:
  • Combine the pork with garlic, herbs, lemon juice, and oil in a bowl. Season generously with salt and pepper, then let the flavors meld together until ready to use.
  • In a saucepan over medium-high heat, heat oil. Add onion and garlic, cook for 5 minutes until onion is soft, stirring occasionally. Add tomatoes, lemon zest, vinegar, sugar, and half the basil. Cook for 25 minutes until thickened, stirring occasionally. Stir in the remaining basil. Spread relish on an oven tray and refrigerate for 20 minutes until cool. Yield: 2 cups.
  • Preheat a sizzling barbecue or chargrill pan until piping hot. Grill pork for 3 minutes on each side until fully cooked. Allow to rest for 5 minutes before slicing into delectable pieces.
  • Drizzle extra oil over the cut sides of the bread. Grill cut-side down on the barbecue until charred, about 30 seconds.
  • Start by laying the bread base on a chopping board. Sprinkle it with rocket and onion, layer on the pork, and generously spoon over the relish. Finally, place the bread top to finish. Cut the assembled sandwich into 4 portions to serve.
