Savory ground beef mixed with corn, tomatoes, and barbecue sauce, topped with cornbread batter and baked to perfection - a quick, easy, and budget-friendly meal for busy nights. Customize seasonings to suit your palate.
Ingredients:
  • 2 pounds ground beef
  • 1 large onion, diced
  • 1 green bell pepper, seeded and diced
  • 1 (10 ounce) can whole kernel corn, drained
  • 0.5 cup barbeque sauce
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 3 (8.5 ounce) packages corn bread mix
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • In a large skillet over medium-high heat, break apart the ground beef until evenly browned. Mix in the onion, bell pepper, corn, and tomatoes until vegetables are tender. Drain the excess grease, then stir in the barbeque sauce. Spread the beef mixture evenly in a 9x13 inch baking dish.
  • Follow the package instructions to prepare the cornbread batter mixes. Spread the batter evenly on top of the beef mixture.
  • Bake in a preheated oven for 20-25 minutes until the top is golden brown and a knife inserted in the center comes out clean.
