Decadent French sauce with butter, wine, and cream, perfect for fish.
Ingredients:
  • 1.5 tablespoons chopped shallot
  • 1 bay leaf
  • 6 black peppercorns
  • 0.25 cup white wine vinegar
  • 2 tablespoons dry white wine
  • 0.25 cup heavy cream
  • 1.5 cups cold butter, cut into 1/2 inch pieces
Instructions:
  • In a saucepan, combine shallot, bay leaf, peppercorns, vinegar, and wine. Bring to a boil, then simmer over medium heat until liquid reduces to 2 tablespoons.
  • 1. Add heavy cream to the pot and simmer until reduced by half. 2. Increase heat to medium-high and gradually whisk in butter pieces until melted and thickened. 3. Strain sauce through a mesh strainer to remove spices. 4. Serve hot.
