Ingredients:
  • 20 g fresh yeast or 2 × 7g sachets of dried yeast
  • 20 g runny honey
  • 500 g strong bread flour plus extra for dusting
  • 500 g fine semolina flour plus extra for dusting (if you can’t get hold of any semolina flour, plain flour will do)
Instructions:
  • In a bowl, combine yeast and honey with 325ml of tepid water. On a clean surface or in a large bowl, mix together flour, semolina flour, and 10g of sea salt, creating a well in the center. Pour in the dissolved yeast mixture and gradually incorporate all the dry ingredients. Add 300ml of tepid water, kneading until a dough forms. Adjust water if needed. Knead the dough for 5 minutes until smooth. Shape into a round and place on a baking tray. Score the dough, then let it rise until doubled, approximately 40 minutes to 1.5 hours in a warm place. Once doubled, knock back the dough, shape it, and let it rise again until doubled. Preheat the oven to 220°C/425°F/gas 7. Gently place the dough in the oven and bake for 20-25 minutes until cooked. Cool on a wire rack. Enjoy your freshly baked bread!
