Broil chicken breasts in olive oil for juicy, crispy perfection.
Ingredients:
  • 3 tablespoons extra-virgin olive oil
  • 4 bone-in chicken breast halves with skin
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Position an oven rack about 6 inches from the heat source and preheat the broiler. Rub olive oil on each chicken breast and season both sides with salt and pepper. Arrange chicken skin-side down on a broiling pan.
  • Broil the chicken breast in the preheated oven until no longer pink at the bone and the juices run clear, about 20 minutes, flipping halfway through. Ensure it reaches an internal temperature of 165°F (74°C) when checked with an instant-read thermometer. Rest for 5 minutes before serving.
