Delight the family with these irresistible apple muffins - a kid favorite!
Ingredients:
  • Melted butter (optional), for greasing
  • 300g (2 cups) plain flour
  • 10.00 gm baking powder
  • 5.00 gm ground cinnamon
  • 118.80 gm brown sugar, firmly packed
  • 2 medium (about 375g) Granny Smith apples, cored, peeled, chopped
  • 125g (3/4 cup) raisins
  • 125g butter, melted, cooled
  • 2 eggs, lightly whisked
  • 180ml (3/4 cup) milk
Instructions:
  • Preheat the oven to 200°C or 180°C fan-forced. Gather your ingredients. You'll require 12 medium (125ml/ 1/2 cup) muffin pans. Non-stick muffin pans are ideal for this recipe as they eliminate the need for greasing. If using regular pans, lightly grease them by brushing with melted butter or margarine, or line them with paper muffin cases.
  • Combine plain flour, baking powder, and cinnamon by sifting them into a large bowl. This will ensure a light texture for your muffins. Mix in brown sugar, apples, and raisins until thoroughly combined.
  • Blend the butter or margarine, eggs, and milk until fully integrated for a smooth mixture. Combining the wet ingredients first ensures a seamless incorporation with the flour mixture.
  • Gently combine the milk mixture with the flour mixture using a large metal spoon until just mixed. Avoid over-mixing to ensure soft muffins.
  • Divide the mixture evenly among the muffin pans.
  • - Bake the muffins in a preheated oven for 20 minutes or until golden and fully cooked. Test doneness by inserting a skewer into the center of one; if it comes out clean, they're ready. If not, bake a bit longer before retesting. - Remove from oven and let stand for 2-3 minutes before transferring to a wire rack. This helps the muffins release easily from the pans. - Serve warm or at room temperature. Store leftovers in an airtight container for up to 1 day.
