Basic Pickling Spice Blend

Homemade pickling spice blend: Mustard seed, black peppercorns, cinnamon or allspice are key. Customize with other spices. Shelf stable for a year and yields multiple batches.
Ingredients:
  • 1 cinnamon stick (or 1 tablespoon cinnamon chunks)
  • 2 bay leaves
  • 2 tablespoons yellow mustard seeds
  • 2 tablespoons coriander seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon dill seeds
  • 1 teaspoon allspice berries
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon dried minced ginger (optional)
  • 8 whole cloves
Instructions:
  • Prepare the spices: Using a mortar and pestle or electric spice grinder, crush the cinnamon stick into 1/4 inch pieces. Repeat the process for the bay leaves until they are broken into small pieces of similar size. Combine both spices in a small bowl.
  • Blend all spices thoroughly, then either transfer to a spice jar using a small funnel or use immediately. Store the spice blend in a tightly-lidded jar for up to 1 year.
