Ingredients:
  • 6 cups cold water
  • 1 pound dried beans (such as black, pinto, or kidney), rinsed
  • 1 teaspoon kosher salt
Instructions:
  • Preheat your oven to 300°F (150°C).
  • In a sturdy Dutch oven, bring cold water to a boil over high heat. Add beans and salt, then simmer covered.
  • Bake beans in the preheated oven for about 1 hour and 10 minutes until tender, checking after 30 minutes to make sure they are covered with water. Add more water if needed to keep them covered.
