Enjoy a savory and refreshing spring-inspired dish, perfect after an Asian feast.
Ingredients:
  • 1 large bunch fresh basil, leaves picked, plus extra to garnish
  • 500g caster sugar
  • 250g mascarpone cheese
  • 1.25kg thick Greek-style yoghurt
Instructions:
  • Combine fresh basil leaves and caster sugar in a food processor and pulse until a coarse powder forms. Add mascarpone cheese and Greek-style yogurt, then pulse to combine.
  • If using an ice cream machine, follow the manufacturer's instructions to churn the mixture until smooth. Alternatively, if hand-churning, refer to the note provided. Freeze the mixture until it reaches a firm consistency.
  • Garnish scoops of the ice cream with additional basil leaves before serving.
