Ingredients:
  • 1 tablespoon butter
  • 2 slices lean bacon, chopped
  • 1 small onion, finely chopped
  • 1 pound chanterelle mushrooms, cut lengthwise
  • salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley, or to taste
Instructions:
  • In a skillet over medium heat, melt butter until sizzling. Add bacon and onion, sauté until bacon is crispy and onion is tender, approximately 5 minutes.
  • Combine the chanterelle mushrooms in the skillet, allowing them to simmer until the liquid evaporates completely, approximately 10 minutes. Garnish with parsley and serve promptly.
