Succulent barbecued sausages with gooey cheese filling, served with juicy lamb cutlets.
Ingredients:
  • 8 lamb cutlets, Frenched
  • 8 good-quality thin beef sausages
  • 500ml barbecue sauce
  • 1-2 onions, peeled, sliced
  • 250.00 ml grated mozzarella cheese
  • 8 long bread rolls, cut lengthways
Instructions:
  • Fire up the grill.
  • Arrange the cutlets and sausages on a spacious plate and gently prick them with a fork to prevent splitting during cooking.
  • Take out a serving dish and pour half of the barbecue sauce in it, cover it, and set it to the side. Brush the cutlets and sausages with the remaining BBQ sauce. Grill the sausages for 5-10 minutes, making sure to turn them occasionally until they are evenly browned. Grill the cutlets for 2-3 minutes on each side.
  • Toss the onions in oil and grill on a flat plate until soft and slightly charred.
  • Use tongs to secure sausages in place while making a lengthwise cut, ensuring not to cut all the way through. Sprinkle with mozzarella and barbecue for 1-2 minutes until the cheese melts.
  • Stuff each roll with onions, a cheesy sausage, and a drizzle of tomato sauce. Serve with chops. Alternatively, serve the sausages hot off the grill with chops and a side of BBQ sauce.
