User's Recipe Description: Deliciously spiced and tender pork ribs marinated in a tangy barbecue sauce, then slow-cooked to perfection in the oven until the meat falls off the bone. Rewritten: Tender pork ribs coated in tangy BBQ sauce, slow-cooked to perfection until fall-off-the-bone tender.
Ingredients:
  • 5kg leg of ham
  • 1 large orange
  • 375.00 gm water
  • 6 garlic cloves
  • 180g glace cherries
  • 180.00 gm brown sugar
  • 23.40 gm ground mustard
Instructions:
  • Preheat the BBQ with all burners on under the roasting hood.
  • Prepare the ham by carefully removing the rind and excess fat. Cut the orange rind into thin strips and place it along with water and garlic cloves in a baking dish. Position the ham on a rack over the dish and cover it tightly with foil.
  • Preheat BBQ until hot. Place dish over grill and turn off the burners directly under it. Reduce the remaining burners to low for indirect cooking, allowing heat to circulate around the roast. Cook with hood closed at medium heat for 2 hours.
  • Remove the ham and discard the juices. Score the ham deeply to create a diamond pattern. Place the cherries on top and secure them with a toothpick. Mix sugar, mustard, and marmalade together. Spread half of the mixture over the ham. Grill over moderate heat with BBQ hood down for 30 minutes without foil.
  • Squeeze orange juice and mix with marmalade. Brush over BBQ ham and let it rest for 30-40 minutes uncovered, brushing with marmalade every 10 minutes.
