Easy BBQ pork chops in foil with potatoes and broccoli - ideal for weeknights or camping trips.
Ingredients:
  • heavy-duty aluminum foil
  • 0.75 cup barbecue sauce (such as Sweet Baby Ray's®)
  • 0.25 cup ketchup (such as Heinz®)
  • 2 tablespoons brown sugar
  • 2 teaspoons canola oil
  • 1 teaspoon chili powder
  • 0.25 teaspoon ground black pepper
  • 1 pinch Cajun seasoning
  • 1 pinch Italian seasoning
  • 3 (6 ounce) boneless pork chops
  • 8 small red potatoes, quartered
  • 1 head broccoli, cut into bite-sized pieces
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and grab 3 large sheets of aluminum foil.
  • Combine barbecue sauce, ketchup, brown sugar, soy sauce, canola oil, chili powder, black pepper, Cajun seasoning, and Italian seasoning in a large bowl. Coat both sides of a pork chop with the sauce, then transfer to a piece of foil. Repeat with remaining pork chops.
  • Toss potatoes and broccoli in the delicious sauce until well coated. Divide the veggie mixture evenly onto each pork chop. Seal the foil packets and place them on a baking sheet.
  • Roast in the oven until the pork chops are cooked through and veggies are tender, about 30-35 minutes.
