BBQ Steak Foldovers

Try making these delicious make-ahead barbecue steak foldovers using Original Bisquick® mix for a convenient and tasty beef dinner option.
Ingredients:
  • 2 teaspoons oil
  • 1/2 green bell pepper, cut into thin strips
  • 1/2 small onion, cut into thin strips
  • 1/2 lb boneless beef sirloin steak, cut into 1x1/4-inch strips
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons barbecue sauce
  • 2 slices (1 oz each) provolone cheese, cut in half
  • 2 cups Original Bisquick™ mix
  • 1/2 cup boiling water
  • 2 tablespoons milk
  • 1 egg, beaten
Instructions:
  • Heat oil in a large skillet over medium-high heat. Sauté bell pepper and onion for 3 to 4 minutes until onion softens. Season beef strips with salt and pepper, then add to the skillet with vegetables. Cook for 5 minutes until beef is fully cooked. Stir in barbecue sauce and cook for an additional minute. Remove from heat and set aside.
  • Preheat your oven to 375°F and generously spray a cookie sheet with sides or a 15x10x1-inch pan with cooking spray.
  • Combine Bisquick mix and water in a small bowl until a dough forms. Divide the dough into 4 pieces and shape each into a ball. Cover with plastic wrap until needed.
  • Sprinkle more Bisquick mix on a work surface. Roll out one ball of dough into a 6 1/2-inch round. Place half a piece of cheese on one half of the round. Add a rounded 1/3 cup of beef mixture on top, leaving a 1/2-inch border. Brush edges with milk. Fold dough over the filling and seal with a fork. Transfer to a cookie sheet. Repeat for the rest of the dough, cheese, and beef mixture.
  • Brush the luscious egg wash over the foldovers and bake them until they are gloriously golden brown, usually in 20 to 25 minutes.
