BBQ T-bone steak with chimichurri

Spicy chimichurri enhances juicy T-bone steaks with a charred finish.
Ingredients:
  • 6 Beef T-Bone Steaks
  • Oregano sprigs, to serve
  • 2 long red chillies
  • 40.00 ml red wine vinegar
  • 36.40 gm extra virgin olive oil
  • 1 garlic clove, crushed
  • 82.50 ml finely chopped flat-leaf parsley
  • 82.50 ml finely chopped coriander
  • 40.00 ml finely chopped mint
  • 40.00 ml finely chopped oregano
  • 2.50 gm ground paprika
Instructions:
  • For the flavorful charred chilli chimichurri sauce, preheat a barbecue grill or chargrill on high heat. Grill the chillies, turning occasionally, for 5 minutes until they are charred. Allow the chillies to cool for 5 minutes.
  • With a small sharp knife, halve the chillies lengthwise. Remove the seeds and finely chop the chilli, then transfer to a small bowl. Mix in the vinegar, oil, garlic, parsley, coriander, mint, oregano, and paprika. Stir well to blend all the flavors together. Season with salt and pepper to taste.
  • Coat the steaks evenly with the oil and generously season. Grill for 2 minutes on each side for a perfect medium cook, or adjust to your preference. Transfer to a plate, cover with foil, and allow to rest for 5 minutes before serving.
  • Arrange the steaks on a elegant serving platter and generously drizzle with the flavorful charred chilli chimichurri sauce. Garnish with fresh oregano sprigs and serve promptly.
