Bean and Turkey Chili

Wholesome Bean and Turkey Chili with ancho chile powder, jalapeños, and choice of ground turkey or chicken. Quick, satisfying meal for seven with endless topping options. Ideal for busy weeknights.
Ingredients:
  • 2 teaspoons olive oil
  • 1 lb lean ground turkey or chicken
  • 2 medium jalapeño chiles, seeded, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 cans (14.5 oz each) diced tomatoes, undrained
  • 1 can (15 to 16 oz) pinto beans, drained, rinsed
  • 1 cup water
  • 1 cup frozen sweet corn
  • 2 tablespoons ancho chile pepper powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano leaves
  • 2 tablespoons chopped fresh cilantro, if desired
Instructions:
  • Heat oil in a large Dutch oven over medium-high heat. Cook turkey for 5 to 7 minutes until no longer pink, stirring occasionally. Add jalapeño chiles and garlic; continue cooking for 2 to 3 minutes, stirring occasionally.
  • Add in the tomatoes, beans, water, corn, chili powder, cumin, and oregano. Bring to a boil, then lower the heat and let it simmer for 25 to 30 minutes uncovered, stirring occasionally until the flavors meld together. Serve with a sprinkle of fresh cilantro on top.
