Indulgent beef and bacon pies topped with gooey cheese and eggs.
Ingredients:
  • 450g beef mince
  • 4 bacon rashers, cut into 2cm pieces
  • 1 onion, chopped
  • 400g diced tomatoes
  • 44.40 gm tomato paste
  • 4 sheets ready-rolled shortcrust pastry
  • 8 eggs
  • 40g cheddar cheese
Instructions:
  • Sear mince in a hot pan until golden. Mix in bacon, onion, diced tomatoes, and tomato paste. Let it simmer for 8 minutes until it thickens. Allow the mixture to cool completely.
  • Preheat your oven to 200°C. Prepare 8 pie dishes measuring 9 1/2cm in diameter by lining them with 4 sheets of ready-rolled shortcrust pastry. Place baking paper on the pastry in each dish and fill with rice. Bake for 15 minutes. Remove the paper and rice and bake for an additional 10 minutes.
  • Spoon the chilled beef mixture into the pastry cases. Crack an egg onto each pie, then top with grated cheddar. Bake until golden, around 15 minutes.
